Countertops Built for a Working Restaurant

A restaurant surface takes more abuse in a month than a home kitchen takes in a year. Hot pans, spilled wine, sanitizer, bar glass, and constant wiping. Al Jory Marble fabricates commercial countertops for restaurants across Chicago and the suburbs, from bar tops and service counters to prep surfaces and host stands. We cut, edge, and finish every piece in our own Crestwood shop, so we control the timeline instead of waiting on someone else.

Most restaurant work we do is engineered quartz. It is nonporous, it never needs sealing, and it wipes clean at the end of a shift. Granite and quartzite come in when heat tolerance matters more than pattern consistency. Marble still has a place in a bakery or a pastry station where the cool surface earns its keep.

The real difference in commercial work is planning. Seam placement, overhang support, edge profile, and how the tops meet equipment all get decided before anything is cut. Get those wrong and you live with them for ten years.

Quartz, Granite, and Quartzite in a Restaurant

The right material depends on what happens on that specific surface, and most restaurants end up with more than one.

Quartz is the default for bar tops, service counters, and front of house. It is nonporous, so it does not absorb wine, citrus, or grease, and it does not need sealing on a maintenance schedule nobody will keep. The pattern is consistent slab to slab, which matters when a long bar run needs to look like one piece. Its one limit is heat. The resin can scorch, so anywhere a hot pan lands needs a trivet or a different material.

Granite and quartzite handle heat far better and are the safer call next to a range, a salamander, or a coffee station with steam wands. Both are natural stone, so pattern varies slab to slab and both need periodic sealing.

Marble is porous and etches, which rules it out for most service areas. In a bakery or pastry station it is still the surface professionals ask for, because it stays cool under dough.

Restaurant Surfaces We Fabricate

Every surface in a restaurant has a different job, and each one gets spec’d on its own. Here is what we fabricate most often for Chicagoland restaurants.

  • Bar tops. The centerpiece and the hardest working surface in the room. Long runs, mitered waterfall ends, and drink rail options. Overhangs past twelve inches get steel or corbel support, planned before fabrication rather than after.
  • Service and pass counters. Where food moves from kitchen to floor. Durability and easy cleaning matter more than pattern here, and a square or eased edge wipes down faster than a detailed profile.
  • Prep surfaces. Back of house work counters. Nonporous quartz for general prep, natural stone where heat is in play, marble for pastry and dough stations.
  • Host and hostess stands. Small footprint, high visibility. A remnant or a single dramatic slab does a lot of work for very little material.
  • Server stations and wait stations. Constant traffic, water, and glassware. Undermount sinks and a full height backsplash keep the wall behind them clean.
  • Coffee and espresso counters. Steam, heat, and daily acid from coffee. Nonporous surfaces and sealed cutouts around equipment.
  • Table tops. Stone tops on existing bases, cut to size with a finished edge on all four sides.
  • Restroom vanities. Public facing and heavily used. One durable slab beats a laminate top that needs replacing in three years.

Where Restaurant Countertops Work Best in Chicago Kitchens

The details nobody notices are the ones that decide whether a top lasts. Edge profile is first. A square or eased edge has no crevice for buildup and takes a bar rag in one pass, which is why most commercial jobs skip the decorative profiles that sell well in homes. On a bar top where guests lean in, a slightly softened eased edge is more comfortable without giving up cleanability.

Seams get placed where they will not sit under a pour station, a sink, or the middle of a run where every guest looks. On long bars we plan the layout so veining continues across the seam instead of stopping at it.

Overhangs need support. Anything past twelve inches of unsupported stone gets steel plate or brackets sized during templating, not improvised on install day. Full height backsplashes cost more than a four inch return and are worth it behind any wet or greasy zone, because there is no grout line to scrub.

We also plan around your equipment. Undermount sink cutouts, cooktop and well openings, POS pass throughs, and tap tower penetrations all get cut in the shop to your equipment specs, not field cut on site.

Which Stone Belongs Where in a Restaurant

A bar top, an espresso station, and a pastry bench ask for different things. What survives a hundred covers a night is not always what looks best in the dining room. Here is how the four stones we fabricate hold up in commercial use.

Questions From Chicago Restaurant Owners

Can you install without shutting us down for a day?

Yes. We schedule commercial installations overnight and outside service hours so you are not losing covers. Tell us your slowest window and we work to it. On most bar tops and service counters the install is a single visit, and the space is clean and usable before you open.

What is the best material for a bar top?

Quartz for most bars. It is nonporous, never needs sealing, does not etch from citrus or wine, and takes constant wiping without dulling. If the bar is a design feature and the budget allows, quartzite gives you natural stone with more character and even better durability. We would steer you away from marble on a bar, because citrus and wine etch it within weeks.

Can you fabricate a long bar top, and where will the seams fall?

Yes. Slabs come in finite sizes, so a long run needs seams, and the question is where they land rather than whether they exist. We lay the whole run out before cutting and place seams away from where glasses slide, where a bartender wipes down, and out of the main sight line from the dining room. On quartz the consistent pattern makes a well made seam very hard to pick out.

Is stone surfacing suitable for a commercial food area?

Quartz is nonporous, so liquids do not absorb into it and it stands up to repeated sanitizing without the surface breaking down. Sealed granite and quartzite perform well too. If your build has a specific certification requirement from your inspector or your architect, send us the spec and we will confirm which of our materials meet it before you commit.

Do you provide certificates of insurance for our landlord or building?

Yes. We provide certificates of insurance naming your landlord, building, or management company, reserve freight elevators, and work within building access hours. Send us the contact and the requirements and we handle the paperwork directly rather than routing it back through you.

Can you work with our general contractor on the buildout schedule?

That is how most of our commercial work runs. We coordinate directly with your GC and millwork installer, template once the bases and cabinetry are set and level, and deliver when the space is ready for tops. Bring us in during design rather than after millwork is ordered and we can flag anything that will cause a problem later.

How long does it take from measurement to installed counters?

Templating takes about an hour once the bases are set. Fabrication typically runs one to two weeks depending on the material, the length of the runs, and what else is in the shop. Installation is usually a single overnight. If you are working to an opening date, tell us the date early and we will tell you honestly whether it is achievable.

What does a restaurant bar top or service counter cost?

It comes down to the material, the total square footage, the edge profile, and the cutouts for sinks, wells, and equipment. Quartz and granite generally sit in the same range, with quartzite and marble above them. After a site visit you get a written estimate with material and labor separated. Do you only do bar tops, or back of house as well?

Both. Bar tops, service and pass counters, host stands, cafe and espresso stations, waitress stations, and pastry benches. We also do reception desks and break room counters for offices in the same buildings. If a surface can be cut from stone, we fabricate it.

Do you handle multiple locations or a rollout?

Yes. Repeat layouts across several locations are straightforward for us because the fabrication is templated once and repeated, which also brings the per location cost down. Talk to us about the full scope up front rather than location by location and we can price and schedule it as one program.
