Coffee Shop & Cafe Countertops Fabricated & Installed

A coffee counter runs three hundred transactions before noon. Steam, espresso, syrup, citrus, milk, and a sanitizer wipe every few minutes. Al Jory Marble fabricates countertops for cafes and coffee shops across Chicago and the suburbs, from espresso bars and service counters to pastry displays and bar seating. Everything is cut, edged, and finished in our own Crestwood shop.

Most cafe work we do is engineered quartz. It is nonporous, so espresso and syrup do not stain it, and it never needs sealing on a schedule your staff will not keep. Granite and quartzite come in where steam and heat sit constantly. Marble shows up in pastry stations and in front of house where the look sells the room.

A cafe counter is also a design piece. It is the surface every customer stands at, leans on, and photographs. It has to work hard and still look like the reason they came in.

CHOOSING A CAFE SURFACE

Premium Calacatta, Quartz, and Granite Stones for Your Coffee Shop

Coffee is acidic, milk stains, and syrup gets everywhere. What you put under the machine and what you put in front of the customer are usually two different decisions.

Quartz is the default for service counters, order points, and bar seating. Nonporous means espresso, citrus, and syrup sit on the surface instead of soaking in, and the pattern runs consistent across a long counter. Its limit is heat, so a portafilter set down straight off the group head or a steam pitcher off the wand should not land directly on it. Most shops solve that with a rubber mat under the machine, which they already have.

Granite and quartzite handle constant heat and steam better, which is why they are the safer call for the machine deck itself and for any surface that lives under a steam wand all day. Both are natural stone and need periodic sealing.

Marble is porous and etches, and coffee will mark it. In a cafe it belongs on a pastry counter, a small feature top, or a table where a little patina reads as character rather than damage.

Where Our Countertops Go in a Coffee Shop

Every surface in a cafe has a different job, and each one gets spec’d on its own. Here is what we fabricate most often for Chicagoland coffee shops.

  • Espresso bar and machine deck. The hottest, wettest surface in the shop. Cutouts for the machine, grinders, knock box, and drain, all cut in the shop to your equipment specs rather than field cut on site.
  • Order and service counters. The customer facing surface. Height, depth, and a comfortable edge matter as much as material, since people lean on it while they pay.
  • Pastry and display counters. Often a nonporous surface under a refrigerated case, sometimes marble where the display is the point. Cutouts and clearances planned around your case dimensions.
  • Pickup and handoff bars. High volume, constant wiping, and drink spills. A square or eased edge cleans faster than a detailed profile.
  • Bar seating and counter runs. Window bars and communal counters. Long runs need matched slabs and planned seams so the surface reads as one piece.
  • Cafe table tops. Stone tops on existing bases, cut to size with a finished edge on all four sides. Round, square, or custom.
  • Back bar and prep counters. Syrup, milk, and dry storage staging. Durability beats pattern here.
  • Restroom vanities. Public facing and heavily used. One durable slab outlasts a laminate top by years.

Details That Decide How a Cafe Counter Performs

The details nobody notices are the ones that decide whether a counter lasts. Edge profile is first. A square or eased edge has no crevice for milk and syrup to collect in, and it takes a bar rag in one pass. On a counter where customers lean in, a slightly softened eased edge is more comfortable without giving up cleanability.

Seams get placed away from the pour point, the machine deck, and the middle of the customer facing run. On long counters we plan the layout so the pattern continues across the seam instead of stopping at it.

Overhangs need support. A counter with bar stools under it means unsupported stone carrying weight people lean on, and anything past twelve inches gets steel plate or brackets sized during templating. Full height backsplashes cost more than a four inch return and are worth it behind the machine, because there is no grout line to scrub milk out of.

Drainage matters more in a cafe than almost anywhere else. Drip trays, drain cutouts, and undermount sinks all get planned into the top rather than added later. Water that has nowhere to go ends up in a seam.

Which Stone Belongs Where in a Coffee Shop

An espresso bar, a brew station, and a pastry case ask for different things. The surface a barista works on for ten hours a day is not always the one that should sit under the display. Here is how the four stones we fabricate hold up in a cafe.

Questions From Chicago Cafe Owners

Can you install overnight so we open on time?

Yes, and we plan for the fact that cafes open early. We install after close and clear out before your first pour rather than costing you a morning rush. Tell us your opening time when we do the site visit and we schedule backwards from it.

What is the best countertop material for an espresso bar?

Quartz for most espresso bars. It is nonporous, so coffee, milk, and syrup do not soak in and leave rings, and it takes constant wiping without the finish dulling. Granite is the better call for a brew station where hot urns and equipment sit, since it handles direct heat that quartz does not. We would steer you away from marble anywhere espresso and citrus land, because it stains and etches within weeks.

Can you cut the openings for our drip tray, drain, and knock box?

Yes. Drip tray recesses, drain openings, water line penetrations, grinder cutouts, and knock box openings are all part of the fabrication. Send us the equipment spec sheets before we cut, because a drop in knock box and a drain flange are built to specific dimensions and the edge around them needs to be properly dressed to survive daily use.

Will the counter hold up to a knock box being hit all day?

Granite, quartz, and quartzite all handle it. Hundreds of portafilter knocks a day is real repeated impact, and the thing that actually fails is a poorly dressed cutout edge rather than the stone itself. We radius and polish the opening properly so there is no sharp edge to chip. Marble is the one we would not put a knock box into.

Will the counter support the weight of our espresso machine?

We plan for it. A two or three group machine is a heavy point load, and we check what is underneath during the site visit and account for it at fabrication. Tell us the machine you are installing and where it sits before we template, along with anything else heavy like a bulk grinder or a batch brewer.

Is stone suitable for a food service counter?

Quartz is nonporous, so liquids do not absorb into it and it stands up to repeated sanitizing without the surface breaking down. Sealed granite and quartzite perform well too. If your buildout has a specific certification requirement from your inspector or architect, send us the spec and we will confirm which of our materials meet it before you commit.

Can you do a long service counter in one run?

Slabs come in finite sizes, so a long counter needs seams and the question is where they land. We lay out the whole run before cutting and place seams away from the pickup area, away from where cups slide, and out of the sight line from the queue. On quartz the consistent pattern makes a well made seam very hard to notice.

Do you provide certificates of insurance for our landlord?

Yes. We provide certificates of insurance naming your landlord, building, or management company, reserve freight elevators, and work within building access hours. Send us the contact and the requirements and we deal with the paperwork directly.

Can you work with our contractor on the buildout schedule?

That is how most of our cafe work runs. We coordinate with your general contractor and millwork installer, template once the bases are set and level, and deliver when the space is ready for tops. Bring us in during design rather than after the millwork is ordered and we can flag equipment clearance problems before they cost you time.

How long from measurement to installed counters?

Templating takes about an hour once the bases are in. Fabrication typically runs one to two weeks depending on the material, the length of the runs, and the cutout work. Installation is usually a single overnight. If you have an opening date, tell us early and we will be straight with you about whether it is achievable.

What does a cafe counter cost?

It depends on the material, the total square footage, the edge profile, and how many equipment cutouts the job needs. Quartz and granite generally sit in the same range, with quartzite and marble above them. After a site visit you get a written estimate with material and labor separated.
